Krispy Kreme Doughnut Brownies

Thats right!! Krispy Kreme Brownies!!

 

I have taken two of my favorite desserts and combined into one delicious chocolate treat.

 

Get to work and bake- bake- bake!!!

 

 

 

 

Brownie Ingredients

 

3 Krispy Kreme Glazed Doughnuts

1/2 cup White Sugar

2 tablespoons Butter (unsalted)

2 tablespoons Water

1 cup Semisweet Chocolate Chips

1/2 cup Milk Chocolate Chips

2 Eggs

1/2 teaspoon Vanilla Extract

2/3 cup All-Purpose Flour

1/4 teaspoon Baking Soda

1/2 teaspoon Salt

Brownie Doughnut Glaze Ingredients

 

1/4 cup whole milk

1 teaspoon vanilla extract

2 cups confectioners’ sugar

 

Directions

 

Combine milk and vanilla in a medium saucepan and heat over low heat until warm. Sift confectioners’ sugar into milk mixture. Whisk slowly, until well combined. Remove the glaze from the heat and set over a bowl of warm water.

Recipe Steps

 

Step 1 – Add Sugar and water into a sauce pan. Warm on Med Low heat to start melting the sugar. As the water heats up add the butter. Stir so the mixture does not burn. If it starts to boil large bubble turn down heat. We want a smooth even heat to melt the sugar but not to get the mixture too hot. (If it were to get too hot the eggs would cook the instant we added them.) Remove from the heat.

 

Step 2 – Slowly add chocolate chips to sugar, water and butter mix. Stir the chips until they melt.

 

 

 

Once all the chips have been added and melted proceed to step 3.

 

 

Step 3 – Add the eggs to the melted chocolate. Gently stir the mixture until the eggs have mixed well. Once the eggs have been mixed add the Vanilla Extract.

 

 

 

Step 4 – Add the Baking Soda and Salt then stir. Next add the All-Purpose Flour. I add half the flour then stir then add the rest. Gently stir until the brownie batter is brown again..

 

 

 

Step 5 GET The Doughnuts!!!!!!

 

Step 5 – Buy a dozen Krispy Kreme Doughnuts. 3 will be used in the recipe and the other 9 are for you to eat. :) When I need to buy the doughnuts a day in advance I store them in freezer zip lock bag to keep fresh.

 

Step 6 Eat a Doughnut

 

 

 

Step 7 Chop up 3 Krispy Kreme doughnuts into small pieces.

 

 

 

 

Step 8 Stir chopped doughnuts into brownie batter.

 

Step 9 – Pour mixture into a greased 8×8 inch square pan. Place in a 325 degree preheated oven. Bake for 30 minutes in the preheated oven, until brownies set up. Do not over bake this recipe!

 

Use the toothpick test to check for doneness. If the wooden toothpick comes out still looking wet and gooey, the brownies are not done yet.

 

 

 

 

Cool in pan and cut into squares. Use a plastic knife to cut the brownies to avoid the jagged edges.

 

Lastly we can not forget the Donut Glaze!!!

1/4 cup whole milk

1 teaspoon vanilla extract

2 cups confectioners’ sugar

 

Directions

 

Combine milk and vanilla in a medium saucepan and heat over low heat until warm. Sift confectioners’ sugar into milk mixture. Whisk slowly, until well combined. Pour glaze over cut brownies and enjoy!!! Yum

5 minute chocolate cake. And it tastes good. Not as good as a “real” cake that you bake from scratch in your oven, but for something you can whip together in literally 5 minutes (including microwave time) this is darn good.

Confession: I’ve had this twice since finding the recipe yesterday. (And now I’m feeling embarrassed at my lack of willpower).

Functionista: Someone who consistently wears situationally appropriate clothing.

Anyone who dresses purely according to the dictates of function, in response to actual weather conditions and in pursuit of personal comfort.

The opposite of fashionista.

In other words: me.

At least, that’s the way I dressed for most of my life. Deep inside, there was a fashionista waiting to add shiny baubles and leather boots. But for many (many) years, I resisted.

No, I dressed functionally cute for most of my adult life because it was easy. Easy to blend in. Easy to hide out. Easy to not be judged (as showy or heaven forbid I draw any attention). /> id="more-4232"> /> So throughout href="http://lawlesscoaching.com/did-you-miss-your-exit/">my days as a software engineer, I almost exclusively wore: jeans, grey/black href="http://www.amazon.com/gp/product/B002VGVKG4/ref=as_li_ss_tl?ie=UTF8&tag=browfordinn-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=B002VGVKG4">Converse Lo Tops style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=browfordinn-20&l=as2&o=1&a=B002VGVKG4" alt="" width="1" height="1" border="0" />, t-shirt, and a grey/black hoodie… or on fancy days: a sweater.

Excuse me a moment as a I weep.

Granted, there were glimmers of something more: the fun going-out tops that one time I was single for like 6 months. The form-fitted href="http://www.express.com/home.jsp">Express outfits I bought toward the end of my first marriage. The summer dresses that I’d buy, wear once, then push to the back of my closet because I felt weirdly exposed or frilly.

And the last year or so (working from home) was even worse: slippers, yoga pants/sweats, t-shirt/tank, and a sweater to dress things up a bit (Where did this idea that sweaters are dressy come from?!).

But I’ve had enough. This is the year I will get dressed like I mean it. Even if I never leave the house.

Why bother if your only co-worker is a cat?

Because I feel better when I wear real clothes. I feel like a professional (speaking of professionals, have you read href="http://www.amazon.com/gp/product/0446691437/ref=as_li_ss_tl?ie=UTF8&tag=browfordinn-20&linkCode=as2&camp=1789&creative=390957&creativeASIN=0446691437">The War of Art style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=browfordinn-20&l=as2&o=1&a=0446691437" alt="" width="1" height="1" border="0" />? I totally recommend that if you’re a creative type who finds it easy to not make time to create).

And I feel like a real person, not Ms. Schleppy “Hasn’t Showered in Days” McSchlepperton.

Added bonus: I don’t need to change my pants when/if I leave the house.

I’ve watched so many episodes of href="http://tlc.howstuffworks.com/tv/what-not-to-wear">What Not to Wear that even in my schleppiest schleptitude, I would not leave the house wearing yoga pants or sweats.

The bottom line to all of this rambling is that I have plans.. or intentions this year that…

  • I will dress like a real live person every day (well, work days anyhow).
  • I will dress so that I only need to put shoes on to leave the house.
  • I will experiment with my clothes and actually wear outfits.
  • I will dress so that I do not need to change my pants in order to leave the house.
  • I will have fun with how I dress.

In other words, I will not go for easy when easy means hiding out. I will own my style and I will stand tall knowing that I look freaking awesome… even if I’m the only one who agrees. And I will wear my confidence with some kick-ass boots.

Hey!

I’ve been thinking about you. How are you? I’m good!

You ready for 2012? I AM!!! I’m excited. I think it is going to be a great year. I have lots going on… I’m taking an acting class (for fun), I’m finishing up a leadership program that I started in the fall, I’ll be working on getting certified as a href="http://lawlesscoaching.com">life coach, and generally just doing some awesome stuff.

As for Brownies for Dinner… I’ve got ideas. I feel like it’s time for a facelift. So I’m redesigning and I’m not sure how long it will take me to finish re-arranging the furniture. So please be patient with me. /> id="more-4218"> /> You’ve been patient thus far with my slackerhood… posting every once in a long while this last year… so I feel confident you’ll hang in there while I do some construction.

What I learned in 2011

  • I’m not as excited about baking href="http://browniesfordinner.com/category/recipes/guilty-pleasures/">as I once was.
  • I can guilt myself out of writing blog posts for a really long time… especially when I let myself believe that this is *only* a food blog and therefore I can’t write posts unless they are about food. Also, I am crazy.
  • href="http://lawlesscoaching.com">I love helping others live out their dreams
  • I am stronger than I think I am. And so are you.
  • I’m ready to do something big.

What’s I’m planning for 2012

  • A new look. For the blog and for me. I’ve decided that at 37 it is finally time for me to find and embrace my personal sense of style… you’ll get to hear all about it as I figure this out. It should be fun, or at least funny to see. Also, there will be at least one cute and awesome giveaway. Soon.
  • Food… of course
  • More. And less. That is, more posting, and less stuff. I’m clearing out my closet and cupboards and will be telling you all about that too… ’cause less is more.
  • Shiny objects… squirrel… you know, like random stuff. I’m taking the filters off. For reals. Look out.
  • Videos. I’m not sure of what yet, or maybe I’m embarrassed to own up to it at the moment, but stay tuned.
  • FUN. duh.

I was out for a run yesterday when I had an idea for a series of blog pots that would focus on those things that maybe I’ve been keeping to myself… afraid of saying out loud (on line) for fear that you would think I’m weird.

Well, the fact is: I am weird. /> id="more-4211"> /> I can accept that now. So here I am for my first TMI Tuesday (tmi as in “too much information”). We’ll see how long the “series” lasts.

The idea for this series came to me as I started my run. I had a lot of sore muscles in my legs and butt from doing the “Legs & Shoulders” workout from href="http://www.beachbody.com/product/fitness_programs/p90x.do">P90x on Saturday. Sooo sore.

So there I was, starting my run very slowly. And as I jogged my way up the path, my butt bounced with each and every step… in a way that made me wonder if I needed a sports bra for my butt… because it hurt with each bounce. And I thought: I should write a post about this.

Crazy, right? But that thought lead to an idea of starting a series of “true confession” type posts. Everything from how compulsive I am about candy to how long it’s been since I last showered… and many other topics that aren’t always the most comfortable to share (but I believe that by sharing these things it makes us more human, more real, and if nothing else gives us something to laugh about… and who doesn’t like to laugh?)

Anyway, today’s “tmi” isn’t that bad but I thought what inspired it was funny. And I have other stories… so many stories and embarrassing confessions. Stay tuned.

Did you watch last night’s href="http://www.bravotv.com/top-chef">Top Chef? You know, the new one in Texas. I recorded it then watched it this afternoon. And while I usually love href="http://www.bravotv.com/top-chef">Top Chef, this episode left me feeling… well, a little annoyed.

I get that they wanted to make it bigger being in Texas and all that. But shouldn’t we be starting the real competition in episode 2? I mean, come on. Instead we get 2 hours of qualifying rounds. It feels like filler to me. Maybe I’m just annoyed because I didn’t get to see who all of the finalists will be.

Maybe I’m spoiled? /> id="more-4202"> /> It’s not that I have anything against the qualifying rounds, I just think they should have gotten them all done in the premier last night so we could get on with it. But I guess their strategy is working, I’m going to watch next week so I can see who else made it into the “main event”. Hrm. I feel so cheap.

Anyway.

What is your favorite href="browniesfordinner.com/tag/pumpkin/">pumpkin treat? I do love href="browniesfordinner.com/2010/11/16/pumpkin-pie/">pumpkin pie with lots of whipped cream, but my absolute favorite pumpkin treat (for the moment) is pumpkin bread.

It all started a week ago when I innocently bought a slice of pumpkin bread with my soy latte at href="http://www.starbucks.com/">Starbucks. The href="http://www.target.com">Target near me has a Starbucks inside and sometimes I like to sip a latte while I look at the stuff I don’t need. But anyway, the pumpkin bread. Yum.

I left Target and hit href="http://traderjoes.com/">Trader Joe’s to pick up a few essentials and was greeted by stacks of their boxed pumpkin bread mix.

So I bought one.

And then I went home and made it. And then I ate it.

Well, I did share it with Dan and the boys but I got mine

As I wiped the counters clean of the last remaining pumpkin bread crumbs, I realized that I have not made pumpkin bread in a long time, if ever. By made I mean, with a recipe not a box (not that there is anything wrong with the right box).

It took me a week of hemming and hawing and avoiding Starbucks and Trader Joe’s, but I finally did it. I made pumpkin bread. And it is delicious.

Pumpkin Bread with Walnuts and Cranberries

This bread is perfect with a cup of tea in the afternoon. It is easy to mix up (by hand even), and it tastes like autumn.

2 cups all-purpose flour /> 3/4 teaspoon baking soda /> 1/2 teaspoon ground cinnamon /> 1/4 teaspoon allspice /> 1/4 teaspoon ground cloves /> 1/4 teaspoon ground ginger /> 1/4 teaspoon salt /> 2 large eggs /> 1/3 cup water /> 1 1/2 cups sugar /> 1 cup pumpkin puree, canned or make your own [link] /> 1/2 cup canola oil /> 1 teaspoon vanilla extract /> 1 cup chopped walnuts /> 1 cup dried cranberries

  1. Preheat the oven to 350 degrees (Fahrenheit). Grease a loaf pan lightly (with butter or baking spray).
  2. Whisk together the dry ingredients (flour, baking soda, cinnamon, allspice, cloves, ginger, and salt).
  3. In a separate bowl, whisk together the eggs and water. Add the sugar and blend well. Add the pumpkin puree, oil, and vanilla extract, and blend well.
  4. Add the pumpkin mixture to the dry ingredients and whisk until blended smooth.
  5. Stir in the walnuts and cranberries. Pour the batter into your greased loaf pan.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean (NOTE: it took my loaf 75 minutes to cook through. I had to put foil over the top for the last 10 minutes to keep it from over-browning).
  7. Cool on a baking rack until you can’t stand the wait any longer, then slice off a piece and enjoy it with a cup of tea.

I hate when bloggers disappear for months then come back saying “Sorry I haven’t written in a while” and “Hey, I’m still here”. It just seems… silly. I mean, we all get busy. And blogs are like friendships: sometimes we are in constant contact and other times… well, not so much.

Anyway, how the heck are you? It really has been too long. /> id="more-4197"> /> I’ve been doing really well… keeping busy shifting careers, learning to be a stepmom, and reclaiming my mojo.

I finished up the last course at href="http://www.thecoaches.com" target="_blank">The Coaches Training Institute in August. So now I am a href="http://lawlesscoaching.com/about/" target="_blank">coactive life coach.

What does that mean? /> Well, for starters it means I’m building href="http://lawlesscoaching.com" target="_blank">my own business which is awesome and scary all at once.

I coach people (entrepreneurs, professionals, and creative types mostly) to help them achieve more. I work with them to keep their focus on what’s important to them so that they can reach their goals sooner as well as find balance in their lives.

It’s very fulfilling and I’m completely excited about it!

Krispy Kreme Doughnut Brownies

Thats right!!  Krispy Kreme Brownies!!

I have taken two of my favorite desserts and combined into one delicious chocolate treat.

Get to work and bake- bake- bake!!!

 


Brownie Ingredients

3 Krispy Kreme Glazed Doughnuts
1/2 cup White Sugar
2 tablespoons Butter (unsalted)
2 tablespoons Water
1 cup Semisweet Chocolate Chips
1/2 cup Milk Chocolate Chips
2 Eggs
1/2 teaspoon Vanilla Extract
2/3 cup All-Purpose Flour
1/4 teaspoon Baking Soda
1/2 teaspoon Salt

Brownie Doughnut Glaze Ingredients

  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 cups confectioners’ sugar

Directions

Combine milk and vanilla in a medium saucepan and heat over low heat until warm. Sift confectioners’ sugar into milk mixture. Whisk slowly, until well combined. Remove the glaze from the heat and set over a bowl of warm water.

 

Brownie Recipe Characteristics

Recipe Steps

Step 1 – Add Sugar and water into a sauce pan. Warm on Med Low heat to start melting the sugar. As the water heats up add the butter. Stir so the mixture does not burn. If it starts to boil large bubble turn down heat. We want a smooth even heat to melt the sugar but not to get the mixture too hot. (If it were to get too hot the eggs would cook the instant we added them.) Remove from the heat.

Step 2 – Slowly add chocolate chips to sugar, water and butter mix. Stir the chips until they melt.

 

Once all the chips have been added and melted proceed to step 3.


Step 3 – Add the eggs to the melted chocolate. Gently stir the mixture until the eggs have mixed well. Once the eggs have been mixed add the Vanilla Extract.

 

Step 4 – Add the Baking Soda and Salt then stir. Next add the All-Purpose Flour. I add half the flour then stir then add the rest. Gently stir until the brownie batter is brown again..

 

Step 5 GET The Doughnuts!!!!!!

Step 5 – Buy a dozen Krispy Kreme Doughnuts.  3 will be used in the recipe and the other 9 are for you to eat.  :)  When I need to buy the doughnuts a day in advance I store them in freezer zip lock bag to keep fresh.

Step 6  Eat a Doughnut

 

Step 7  Chop up 3 Krispy Kreme doughnuts into small pieces.

 


Step 8  Stir chopped doughnuts into brownie batter.

Step 9 - Pour mixture into a greased 8×8 inch square pan. Place in a 325 degree preheated oven. Bake for 30 minutes in the preheated oven, until brownies set up. Do not over bake this recipe!

Use the toothpick test to check for doneness. If the wooden toothpick comes out still looking wet and gooey, the brownies are not done yet.

 


Cool in pan and cut into squares. Use a plastic knife to cut the brownies to avoid the jagged edges.

Lastly we can not forget the Donut Glaze!!!

  • 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 cups confectioners’ sugar

Directions

Combine milk and vanilla in a medium saucepan and heat over low heat until warm. Sift confectioners’ sugar into milk mixture. Whisk slowly, until well combined.  Pour glaze over cut brownies and enjoy!!!  Yum

Brownie Power

I was so sure that a Kit-Kat Brownie recipe was a great idea.

I love Kit Kat candy bars and imagined them surrounded in a hot fresh brownie.


I put the Kit-Kat bars into my brownie batter this weekend.  The whole family was excited about trying this recipe.  I had talked about it for weeks.  :)

The brownie tasted great but the Kit-Kat wafer became tough in the oven.  What a disappointment.

Fudgy Brownies
From the book The Essence of Chocolate by John Scharffenberger and Robert Steinberg
Yield 16 brownies

Introduction
In order to achieve the crackled top and fudgy texture of classic brownies, this batter must be beaten by hand until it pulls from the sides of the bowl. This sounds like a task, but it’s not; there’s something homey and satisfying about stirring this thick, glossy batter yourself.

Ingredients
6 Tbsp. (3 ounces) unsalted butter, cut into cubes, plus more for the pan
8 oz. 70-percent bittersweet chocolate
3/4 cup plus 2 tablespoons granulated sugar
1/4 tsp. salt
2 large eggs
1/3 cup all-purpose flour
1/2 cup toasted walnut halves (optional)

Steps
Position a rack in the lower third of the oven and preheat the oven to 325 degrees.
Cut an 8-by-16-inch piece of parchment paper. Lightly butter an 8-by-8-by-2-inch pan and line it with the parchment, allowing it to extend evenly over the opposite sides. Butter the parchment, including the paper on the sides of the pan.
Place the chocolate and butter in a large heatproof bowl set over a pot of gently simmering water and stir occasionally until melted and smooth. Remove from the heat.
With a large rubber spatula or wooden spoon, beat the sugar and salt into the chocolate mixture. Beat in the eggs one at a time. Add the flour and mix vigorously until the batter is very glossy and pulls away from the sides of the bowl.
Break the nuts, if using, into large pieces over the batter and fold them in.
Pour the batter into the prepared pan and tap the pan bottom on the countertop to level the batter. Bake for 30 to 35 minutes, or until a skewer inserted in the center comes out moist but clean.
Let cool in the pan on a cooling rack for 10 minutes. Remove the brownies from the pan using the parchment “handles,” and cool completely on the rack before cutting into 2-inch squares.
